Having grown up in Lancaster County, Pennsylvania  and having spent a few years with an Amish family as my child care givers when my mother was working, I had the wonderful opportunity to experience this culture up close.  I can still think back to all the wonderful experiences I had and remember the sounds and smells of the busy kitchen.  
The Amish and Mennonite people are some of the best cooks you will ever find. 

I will share with you some of my favorites and if there is ever anything you might be looking for in a recipe just ask and I will see what I can do to find you that authentic recipe. Some of these recipes will include Shoe-Fly Pie, Pork and Sauerkraut (a New Year's Day Tradition), Corn Fritters, Schnitz and Knepp, Chicken Corn Soup, Amish Cole Slaw, Ham and Green Beans, Pumpkin Roll, Chow Chow, Chicken Pot Pie, Whoopie Pies.  


 
 
Mocha Zucchini Bread/Cake with Chocolate Chips 
 
2  3/4  cups all-purpose flour         1 tsp. baking soda          1/2 teaspoon ground cinnamon    
1/2 teaspoon gr. nutmeg        1/2 teaspoon baking soda      1 tsp salt      2 cups white sugar
 
1/4 cup chocolate powder - 
 
Place the above ingredients together in the bowl of your Kitchenaid.
 
3\4 cup vegetable oil       2 teaspoons vanilla extract    2 cups cubed zucchini   
 
3 eggs          1/4 cup cold coffee
 
Place the above liquid ingredients in a Vitamix and blend on high about 30 seconds or until it is smooth.   Pour into the bowl of your mixer and blend on low about three minutes making sure to scrap the sides.  

Now stir in the following ingredients

1/2  cup finely chopped pecans or walnuts      1 cup small semisweet chocolate chips

Directions For Baking

Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans or a large cake pan.

Bake for 50 minutes, or until a toothpick inserted in the middle comes out clean. Remove loaves from pans and cool.
